Like all hot countries, Thailand has a fine repertoire of salads and cold dishes. These aren’t salads in the Western sense, but rather combinations of-fresh and cooked vegetables, often with a little chicken, beef or seafood. Dressings are seldom oil-based. Instead, they tend to be tart and spicy mixtures, made by adding Thai fish sauce to lime juice, tamarind juice or a little rice vinegar. Noodles often feature and it is not uncommon for fruit, such as papaya or mango, to be included.
