As noted in the introduction, ganache is made from chocolate and a liquid. The type of liquid selected will alter the flavor, texture, and mouthfeel of the finished ganache. These variations in finished ganaches are largely related to the fat and water content of the liquids used. Higher-fat liquids will generally produce a creamier ganache.
