The required temperature of the cocoa butter used to color molds depends on the technique to be used. To smear cocoa butter into molds, the cocoa butter must be slightly warmer, about 88°F/31.1°C, since there will be additional motion to accelerate the crystallization process. If using the airbrushing or splattering techniques, the opposite is true. Since the technique requires no additional motion, the cocoa butter needs to be slightly cooler, about 86°F/30.0°C.
