Triangle tubes can be created simply by using poster board or acetate. These tubes can create volume and elegance on a showpiece.
- Draw the desired triangle shape on poster board or acetate and cut out using an Exacto knife. It is much easier to work with triangle shapes that have a single curve, rather than two curves like an S.
- Score the middle of the shape all the way down using an Exacto knife. This will allow the template to bend appropriately.
- Begin to bend the template along the scored line, then unbend and place it flat with the scored part facing down toward the table.
- Pipe tempered chocolate all the way down the surface of the template.
- Use a spatula to smooth the chocolate evenly over the entire template.
- As soon as the chocolate begins to set, remove the template from the table.

- Remove the chocolate from the template as soon as it has set completely in order to prevent additional curvature due to the shrinking of the chocolate.
- Spread tempered chocolate onto a piece of parchment paper or newsprint. Before the chocolate sets, lay the curved chocolate piece directly on top to close the triangle. If the bottom edges of the curved piece are not flat, melt the edge of the open side on a food warmer or a hot sheet pan before placing the shape on top of the spread chocolate.
- As soon as the chocolate is set, cut out the completed triangle shape along the edges, being sure to make a few release cuts along the sides as well.
- After the crystallization is complete, remove the triangle piece from the paper.
