Another way to give texture to chocolate is by using gelatin or silicone molds. Gelatin molds are easy to create using the technique outlined below. The same techniques can be accomplished using silicone; however, gelatin is much less expensive. Using silicone is a two-part process requiring both silicone and a hardener. If using silicone, be careful to follow the package directions regarding the ratio of hardener to silicone. Gelatin molds can be made from gelatin powder or leaves, using any chocolate mold or another non-conventional item such as wallpaper.
