Here, too, buffalo is leaner and drier than commercial beef. You can use a marinade (make sure it contains plenty of oil). If you do grill the steaks “dry,” be sure to drizzle some olive oil or melted butter or beef fat over them just prior to serving. Or, when they come off the grill, you can top the steaks with a pat or two of a savory compound butter.
