That’s the problem with skinless, boneless chicken breasts. They’re almost pure protein, so there’s nothing to keep them moist. There are at least seven solutions to your problem—feel free to use two or more at one time.

1. Once these chicken breasts have grilled for a few minutes, they are moved a quarter turn to get some expert grill marks.
