Excellent question. To take beer-can chicken off the grill, I use two sets of tongs. I grab the exposed part of the can and the bottom of the bird with one set and steady the top of the bird with the other. I transfer the bird to a platter and show it off, then take it into the kitchen (or away from the table). At that point, holding the can with one set of tongs, I lift the bird off of it with the other set, then carve the chicken into two leg pieces, two thigh pieces, two wing-breast pieces, and two breast pieces, and bring it back to the table.
