Not only can you, you should. There’s nothing like smoke roasting to maximize a turkey’s flavor, while keeping the meat moist, especially when you flavor the bird with a marinade or brine beforehand. Note that I say smoke roasting (indirect grilling with wood smoke at a moderate temperature) rather than smoking. A smoker produces a succulent bird, but the skin will always be rubbery—and as everyone knows, the skin is the best part of the turkey. The Raichlens always cook their turkeys on the grill.
