A Glaze is a thick, often sweet liquid brushed on food during grilling so that it “lacquers” and cooks into the meat.
A Basting Sauce, like a glaze, is also brushed on during cooking. It often contains melted butter and is designed both to add an extra layer of flavor and keep the food moist as it grills.
A Mop Sauce is a thin, unsweetened or semisweet liquid swabbed on meats as they smoke or grill to keep them moist and add flavor. Mop sauces originated in the American South and Texas, where they were (and still are) traditionally applied with clean floor mop or barbecue mop.
