Barbecue sauces vary as much as the meat grilled and the person grilling it. In general, my favorite barbecue sauce at any given time is the sauce traditionally served in that particular region. It can be sweet, as in Kansas City, or without a grain of sugar, as in the chimichurri of Argentina. Time and tradition have established what sauce goes best with a particular cut and style of meat.
