Check food and travel magazines. Write or call the local restaurant critic (I used to be a restaurant critic and I almost always answered such requests). When you get to your destination, start asking everyone for recommendations—especially taxi drivers. Taxi drivers almost everywhere in the world seem to have an unerring nose for great barbecue joints.
