It is now nearly two years since I began the book and I am grateful to everyone who has encouraged and helped me during this time: to my husband and children, particularly my son Henry who has become my ally in the kitchen, to Gwen and Bert Grimmond whose help in the house and garden gave me time to work, to my friends John and Nicola Hilton, in whose house I cooked many of the recipes, and Christina Gascoigne, who listened patiently to my daily progress report. I am also grateful to Roz Denny, who independently checked everything in the book with her usual calm efficiency; to Sandy Carr, Fiona Holman and Beverly Le Blanc, my editors, who were unfailingly supportive however close the deadlines came, and to Susie Macdonald whose enthusiasm and swift typing of much of the manuscript was such a help. Lastly I would like to thank my mother, who first introduced me to the pleasures of food.
