Store most of these vegetables in the refrigerator, wrapped loosely in polythene and use within a couple of days. Peppers and aubergines start to wrinkle when ageing but are still usable. Avocados are best kept at room temperature until ripened, then stored in the refrigerator to prevent overripening. Marrows keep well in a cool, dry place.
