Melt about 15 g (½ oz) butter in a medium-sized gratin dish in a preheated oven, 200°C, 400°F, Gas Mark 6. Add 2 eggs, spooning the butter over them. Season, cover with a little cream and return to the oven for 5–6 minutes until the whites are set but the yolks are still soft.

If you are combining the eggs with other ingredients that need cooking it is best to cook the other ingredients first, either in the same dish or separately. Then break the eggs on top of the cooked ingredients. Eggs cooked in this way will take slightly longer to cook.
