Rice, grains and pulses have kept man alive and healthy for thousands of years, and still form the staple diet of more than half the world’s population. Now, as a result of the high cost of meat and a growing number of vegetarians, the Western world is returning to a diet which previous generations might have scorned as peasant food. If you are a real vegetarian, a variety of pulses and grains, which are full of protein, vitamins and minerals, with the bonus of fibre too, can provide all the nutrients you need. Non-vegetarians can also benefit from the healthy properties of grains and pulses, and once you have realized their versatility in the kitchen, it is very possible you will not need to eat as much meat as you did before.
