Offal offers an enormous variety of different meats and possible ways of cooking them. It includes all the bits of the animal’s carcase that are not straightforward cuts of meat, fat and bone, including the head, tail, feet and internal organs. Although some are squeamish about offal, do not ignore it because it is highly nutritious and economical. It is a rich source of iron which is used by our bodies to make healthy red blood cells. Calf s and pig’s trotters are also wonderful for gelling stock.
