Simple cake decorations are so much prettier than formal, elaborate icing which, although it can still transform a cake into an exciting and impressive centrepiece for a special occasion, doesn’t exactly make a cake look edible. Simple decoration such as sifted icing sugar on top is very effective, yet also reveals the mouthwatering aspects of the cake which make you want to eat it at once.
You don’t need any skill to make attractive cake deco rations, but it does require judgment. What must be learnt is that, like painting a picture, there is a point at which it is time to stop. This is when the appearance is perfect and further decoration will begin to look a muddle. Since cake decorating is the same as any decorating, your colour scheme is just as important. On the whole, one or two sympathetic colours are better than an unthought-out mixture. Certain combinations are especially effective: brilliant red, such as one perfect real red rose on dark brown chocolate, looks dramatic; silver looks lovely on white, and pale pink flowers with green leaves on the palest green icing look very summery.
