Several methods are used to create the many types of Indian dish. Dum cooking, for instance, involves braising the ingredients in a tightly sealed pan, which traps the steam and produces succulent and well-flavoured food. Tandoori cooking, on the other hand, relies on the kebabs or breads being cooked extremely quickly at a very high temperature, lending the ingredients a uniquely smoky flavour. Other techniques call for spices to be fried in different ways and added to the food at a strategic point in the cooking time.
