Used on a daily basis, these ingredients are the cornerstone of the Indian diet, except in regions where veganism is practised. Milk, yogurt and cheese appear in a huge range of dishes, adding much-needed protein and flavour, as well as being consumed on their own as drinks or snacks. Yogurt is especially important in marinades, as the acidity helps tenderize meat. Butter (often in the form of ghee) or oil appear in almost every recipe, for frying off spices and flavourings, browning meat or deep-frying delectable snacks.
