The Himalayas dominate the states of north India, from Kashmir in the north-west to Uttar Pradesh in the south-east of the region. All of the 14 highest peaks in the world can be found here, including Mount Everest, and with precipitous slopes and changeable weather it is no wonder that the food in the northern region is very different from that of the hot, ocean-bathed south. Main dishes often use lamb, goat, chicken, or delicate river fish such as rainbow trout, and there is an abundance of fruit and vegetables.
