Seven states make up the region of north-east India. This is a picturesque, hilly country, bordering on the eastern edge of the Himalayan mountains where they tower over Nepal, Bhutan and China. These states are all landlocked - the only access to the sea is via Bangladesh or Myanmar (Burma) - and so the main focus of regional cuisine is on meat and dairy products rather than fish. However, tasty freshwater fish from the Brahmaputra River and its tributaries brings a welcome variation to the diet.
