Four states make up the region of west India: Goa, a tiny enclave perched on the west coast; Maharashtra, a large state stretching from the Arabian Sea across almost the whole width of India; Gujarat, another coastal state that proudly claims to be the birthplace of many of India’s political leaders, including Gandhi; and Rajasthan, a vast landlocked desert region bordering Pakistan. The food in all of these is fragrant and flavoursome, packed with spices and influenced by the settlers and traders who visited the region.
