Fruit and vegetables may be open-trozen on a special open-freezing tray without covering; iced cakes or fragile pies may be frozen this way. Food should be packed when it is frozen solid. This means that fruit and vegetables will be free-flowing, and the surface of cooked dishes and cakes will not be spoiled.
