The best results are obtained from fully flavoured fruits, particularly berries. In general, fruit for freezing should be of top quality; over-ripe fruit will be mushy; unripe fruit will be tasteless and poorly coloured.
Home-produced fruit should be frozen on the same day as picking, while fruit from shop or market should only be bought in manageable quantities which can be handled in a short space of time.
