Wash and dry offal thoroughly. Remove blood vessels and pipes. Wrap in cellophane or polythene and pack in bags or boxes. Off-flavours may develop if offal is not packed with care. Tongue may be cooked and frozen whole if preferred. High Quality Storage Life: 2 months.
