Drying is a very old method of preserving, with fish, meat, fruit and vegetables traditionally dried by the action of sun and wind. Today, it is practicable to dry fruit and vegetables at home, if the correct temperature is adhered to and there is adequate ventilation. No expensive equipment is involved, but drying racks can be made.
To make drying trays, nail together four wooden laths in a square and stretch wire gauze or cheesecloth between the framework. Wire trays will need the added protection of loose pieces of cheesecloth or muslin to prevent fruit taking the imprint of the wire mesh. Cheesecloth should be well washed to remove any dressing which will scorch easily. Impromptu racks can be oven racks or wire cake trays covered with muslin.
