All kinds of delicious sweet preserves can be made from fruit and some vegetables. They are useful for breakfast and teatime, but also for making tarts, and filling cakes, and for providing sauces for puddings and ices. Equipment can be very simple, and preparation is easy once the basic principles which govern the setting of preserves are understood. When making jams, in particular, try a number of different recipes for each fruit, it is worth mixing different fruits for variety, or making a number of different jams rather than one huge batch of a single recipe.
