This may sound a little depressing, but several of these are not likely to be met at any time, and none of them should be a common occurrence. If the basic rules have been kept, i.e. cleanliness at all times, the avoidance of metal containers, and avoidance of too much contact with the air, then few wines will be infected. There are two types of disorders to consider:
  1. disorders which could well be avoided at the outset;
  2. disorders which occur during fermentation.
