There is often a need for a special pudding in an emergency, or just as a treat for a small party, and it is worth preserving a little fruit in wine or spirits for just such an occasion. A small selection of such preserves can be stored for months, and although the outlay on spirits or wine may seem high, the final cost is low if the fruit is home-grown or bought when cheap and plentiful, and each jar will provide many portions.
