When I sat down to write this book, I assumed it would not be the only French cookbook my readers would own. Thus I decided to eliminate that old warhorse list of equipment that has been published and republished so many times: la batterie de cuisine.

You’ll need nothing special to prepare the recipes here beyond what you already own, assuming you’re serious and reasonably well-equipped home cook. The only possible exception is an electric slow cooker, such as a Crock-pot. Such a cooker is not necessary, but it can be economical and convenient, since many of my recipes call for long, slow cooking with a simple reheating just before they’re served.
