The inventive minds of Italian pasta makers have created an immense variety of pasta shapes. None, however, is for the sole purpose of being aesthetically pleasing. Each shape produces a particular sensation on the palate and is best suited to a particular type of sauce. Many of these special shapes are perfect for sauces with chunks of vegetables or meat because they hold them easily in their folds and cavities.
