Colored pasta simply for the sake of esthetics is in conflict with the philosophy of Italian cooking whose ultimate concern is taste rather than the appearance of food. One does find colored pasta when it contributes a desirable flavor, such as green spinach pasta and red tomato pasta and occasionally black cuttlefish ink pasta.
