Before cutting the pasta let it dry until it feels leathery so the noodles will not stick to each other, but not so dry that it becomes brittle. If you’ve used the pasta machine to roll out the dough the sheets will be the right width to feed them through the cutting attachments. Hand rolled pasta should be cut by hand.
