Cooking and Serving Pasta

The Classic Pasta Cookbook

  • About
  1. Cooking pasta is easy and just takes a little bit of practice and intuition. Ignore the directions on the package of dry store-bought pasta. The cooking time varies depending on the shape and brand of pasta. The only way of knowing when it is done is to taste it. It should be firm to the bite but chewable. Homemade pasta cooks very quickly, about 3 minutes if completely dry, less if still moist. Filled pastas will take longer, about 5 minutes, because there is a double layer of pasta where they are sealed.
