Serving Pasta

Appears in
The Classic Pasta Cookbook

By Giuliano Hazan

Published 1993

  • About
  1. Transfer the pasta to a warm serving bowl and add the sauce.
  2. Toss with a fork and spoon until it is thoroughly coated with the sauce. Do not serve pasta with sauce simply placed on top.
  3. To eat long pasta as Italians do, pick up a few strands with your fork, lifting them away from the rest. Place the tines of the fork against the side of the plate and rotate the fork until the strands are completely rolled onto it. The trick is to only pick up a few strands at a time, otherwise you will end up with too much pasta on your fork for one bite.
