The recipes in this chapter are some of the more popular traditional Italian pasta dishes. A definitive recipe does not exist for any of these sauces; there are many versions, all of which are equally authentic. Mine are based on personal preference, and on the how I have watched my mother make them as I was growing up.

Serves six people if followed by a second course, or four people if served as a single course meal.
