It is important to understand trends, and they should be approached carefully. A technique like spherification is going to stick around for a while, but there are other techniques that are more fads than trends. The problem with trends is that if you are not one of the first to hop on the bandwagon (or better yet, be the person who sets the trend), you are seen as a copycat. Approach each trend, if you must approach, with caution and in small doses. After all, you want to be the keeper of your own style and not of another’s.
