Cheddar cheese is close-textured, golden or orange-red, with a clean, mellow and nutty flavour. It is excellent for cooking, or for eating with fruit, and cider or beer.

Cheshire is more crumbly, and may be orange-red or white. It is particularly good with fruit, or with a piece of cake or semi-sweet biscuits. A blue Cheshire is sometimes available.

Derby is a buttery open cheese, with a clean and tangy flavour and the colour of honey . It, too, is very good with fruit. Derby flavoured with sage leaves is sometimes available and is criss-crossed, if genuine, with thin green lines; a thick green line through the centre of the cheese indicates a synthetic Sage Derby.
