Cheesecakes

The following cheesecakes are made with cottage cheese but by no means all cheesecakes contain cheese. Many traditional cheesecakes were (and are) made with milk ‘set’ with rennet, eggs, herbs or other mildly acid products instead of using a cheese curd.
