Fat and sugar are sometimes added to a basic bread mixture to give richer, longer-keeping bread. When yeast is creamed with sugar, the ‘working’ time is speeded up. Salt is an essential in bread, and is best dissolved first in a little liquid, as dry salt affects the growth of the yeast cells.
