Most of the cakes mentioned at the beginning of this chapter are not included in this book because they are so familiar. But recipes for many others are given in various parts of the book as well as in this chapter. The Berwick May Day tarts are one example, and the Harvest Betsy Cake is another.
Other dishes besides breads and cakes are associated with some of our festivals. Boar’s Head was originally served on Twelfth Night, for instance. Hare Pie is still eaten at Hallerton in Leicestershire on Easter Monday. A Cockle and Mussel Feast is held at Clitheroe in Lancashire to mark the election of the Mayor each year: and grilled trout is the traditional dish served to commemorate Sir Francis Drake’s bringing water to Plymouth. In some areas, flummery is put outside the back door on Midsummer Eve Tor the fairies’.
