Go back over twenty years and anyone who told you that chicken would be an economy food would have been locked up.

Now it is a fact. Apart from fish in certain areas, it is the lowest cost protein available.

We have, however, suffered along the way. The battery-fed and fattened chicken lacks flavor when compared to the hard-to-find farm bird. The flavor loss in fact, in some cases, is so marked that special steps have to be taken with seasonings to give them a lift.

Every chicken dish in this section has been tested with a particularly negative brand of frozen chicken.
