A few people commented that our first book contained very few salad recipes. This reflected the fact that salads represent a relatively small part of The Gate food and menus.

While many of the salads in this chapter make lovely starters by themselves, they often appear on our menus as accompaniments to both main courses and starters, such as the Chickpea and Beetroot Salad with Baked Couscous Aubergine. This demonstrates The Gate philosophy of combining flavours and textures to create a balanced dish.
