I wish to thank Paul Nirens for giving me the idea to write this cookbook. Paul is an Australian chef who has lived in the Galilee for over thirty years, and is the owner of Galileat, a business that hosts collaborative culinary workshops in this lush region of Northern Israel.
Paul helped me bring The Galilean Kitchen to the table through the unique food adventure I experienced in the warm and welcoming kitchen of Nawal Um Salech, in the Arab village of Arrabeh.
