Though a Chinese sand pot could, in fact, be legitimately called an earthenware or clay pot, I have translated it literally from the Chinese to emphasize that it is very different from the clay-pot cookers now so fashionable in the West. In looking for a substitute for a sand pot, do not use a Schlemmertopf-type pot made of unglazed clay. It cooks on a different principle that eschews oil and extra liquids, and will produce disappointing and unattractive results if used for a sand-pot recipe. Also, do not use any earthenware pot with a leaded glaze. To eat the food cooked in one will poison you.
