Storing Whole Birds or Poultry Parts in the Refrigerator

There’s a great trick for keeping chicken fresh for days in the refrigerator that I learned from my food authority friend, Jan Weimer. The trick is to take the whole cleaned bird or chicken breasts and wrap them in a clean, dry, lint-free kitchen towel before stowing them in a plastic bag and putting them in the refrigerator. The towel absorbs any blood or liquid that leaches from the chicken, and the chicken or duck (or squab, turkey, or whatever) stays fresh far longer than if left to sit in its own juice. It is a wonderful method, well worth the price of having to launder a kitchen towel!
