I make it a point to buy fish on the day I plan to cook it, and try never to hold it even a day. If I am forced to refrigerate fresh fish or shellfish overnight, I first remove it from the plastic or paper it was wrapped in at the market, drain off any liquids, then reseal it airtight with fresh plastic film and/or a plastic bag. It goes into the refrigerator on the coldest shelf and if I am using a cranky ice box or one that isn’t very cold then I put the wrapped fish on a rack or tray about an inch above a pan of ice.
