Refreshing Tofu that is on the Wane

If you suspect that your fresh tofu is beginning to sour, you can refresh it by simmering it in plain water to cover for 3โ€“4 minutes. Some Chinese cooks regularly pour boiling water over tofu and let it sit for several minutes just before cooking it as an extra measure of freshness.
