Tofu in its raw state is relatively tasteless and is at its best when marinated in strongly flavoured seasonings. Firm tofu is perfect for marinating, as it has a porous nature that absorbs flavours quickly and easily.
It is best to blanch the tofu first. Bring a large pan of water to the boil, and add a pinch of salt. Place the block of tofu in the water, being careful not to let it break apart. Blanch the tofu for 3 minutes. Remove and place on kitchen paper to remove any excess water. Transfer the tofu to a plate, and cover with the required dressing and marinate for at least 1 hour. Serve, slicing or cubing the tofu as desired.
